Ingredients

1 cup jasmine rice

2 cups vegetable broth (or water)

1 cup fresh green beans, trimmed and cut into 2-inch pieces

1/4 cup dill pickles, finely chopped

2 tablespoons dill pickle juice

1/4 cup red onion, thinly sliced

1/2 cup cherry tomatoes, halved

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh dill for garnish (optional)

Instructions

Cook the Rice: Begin by rinsing the jasmine rice under cold running water until the water appears clear, ensuring excess starch is removed. In a medium saucepan, combine the rinsed rice with 2 cups of vegetable broth. Bring the mixture to a boil over medium-high heat. Then, reduce the heat to low, cover the saucepan with a lid, and let it simmer for approximately 15 minutes or until all the liquid is absorbed and the rice is tender. Once cooked, remove from heat, keep covered, and let it sit for an additional 5 minutes to steam.

Blanch the Green Beans: While the rice is cooking, fill a small pot with water, add a generous pinch of salt, and bring it to a boil. Add the trimmed green beans to the boiling water and blanch them for about 3-4 minutes until they are bright green and tender-crisp. After that, drain the beans and immediately transfer them to a bowl filled with ice water to halt the cooking process. After a few minutes, drain the beans again and set aside.

Prepare the Dressing: In a small mixing bowl, whisk together the olive oil, apple cider vinegar, dill pickle juice, garlic powder, onion powder, salt, and pepper until well combined. Taste the dressing and adjust the seasoning as needed to suit your preference.

Assemble the Bowl: In a large mixing bowl, combine the fluffy cooked rice, blanched green beans, finely chopped dill pickles, sliced red onion, and halved cherry tomatoes. Drizzle the prepared dressing over the ingredients and gently toss everything until it is evenly coated and well combined.

Serve: Spoon the Dilly Beans Rice Bowl mixture into individual serving dishes. If desired, garnish with fresh dill for an aromatic touch. This dish can be enjoyed warm or chilled, making it versatile for any occasion!
