1 block extra-firm tofu, thoroughly pressed and drained

1 cup cooked brown rice or quinoa (your choice)

1 cup broccoli florets, fresh or frozen

1 cup bell peppers, thinly sliced (any color of your choice for visual appeal)

1 cup corn kernels (can use fresh, canned, or frozen)

1 ripe avocado, sliced

¼ cup scallions, finely chopped

¼ cup BBQ sauce (store-bought or your favorite homemade recipe)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional toppings: sesame seeds or fresh cilantro for garnish

Prep the Tofu: Start by cutting the tofu into 1-inch cubes. In a mixing bowl, gently toss the tofu cubes with olive oil, garlic powder, smoked paprika, salt, and pepper until each cube is well coated with the seasoning.

    Bake the Tofu: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned tofu cubes evenly across the sheet. Bake for 25-30 minutes, flipping the cubes halfway through cooking, until they are golden brown and have a crunchy exterior.
