1 red bell pepper, diced

4 cups low-sodium chicken broth

2 cups half-and-half cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Prep the Ingredients: Begin by finely chopping the onion and red bell pepper. Peel and dice the potatoes into bite-sized cubes. Mince the garlic cloves. Set all the prepared ingredients aside for easy assembly.

Sauté for about 3-4 minutes, stirring frequently, until the onion becomes translucent and slightly softened.
