1 teaspoon thyme (dried or fresh)

1 teaspoon black pepper

1 teaspoon salt (adjust according to taste)

½ cup diced bell pepper (choose red or yellow for visual appeal)

¼ cup chopped fresh chives or green onions (for garnish)

Optional: ½ cup cooked bacon bits (for a non-vegetarian touch)

Prep the Ingredients: Begin by prepping all your vegetables. Dice the onion, peel and then chop the potatoes into small cubes, and minutely mince the garlic. If using fresh corn, carefully slice the kernels off the cob and set aside.

    Combine in the Crockpot: In a spacious crockpot, layer the corn kernels, diced onion, chopped potatoes, garlic, vegetable broth, diced bell pepper, smoked paprika, thyme, black pepper, and salt. If you are opting for the bacon bits, fold them into the mixture at this step.
