Ingredients

1 pound cooked turkey, shredded (leftover or rotisserie)

4 cups low-sodium chicken broth

2 cups butternut squash, peeled and cubed

1 cup carrots, sliced

1 cup celery, diced

1 cup potatoes, diced (Yukon Gold or red)

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon ground sage

Salt and pepper to taste

1 cup fresh spinach or kale, roughly chopped

1 can (15 oz) diced tomatoes (with juices)

1/2 cup corn (frozen or canned)

1 tablespoon olive oil (for sautéing)

Instructions

Sauté the Aromatics: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant. This step enhances the flavors of the soup.

Combine Ingredients in the Crockpot: Transfer the sautéed onion and garlic mixture into the crockpot. To the crockpot, add the shredded turkey, chicken broth, cubed butternut squash, sliced carrots, diced celery, diced potatoes, diced tomatoes (including their juices), corn, dried thyme, dried rosemary, ground sage, salt, and pepper. Stir all the ingredients together until everything is well mixed.

Cook the Soup: Secure the lid on the crockpot and set it to cook. Choose the low setting for 6-8 hours or the high setting for 3-4 hours. Allow the soup to simmer, which helps the flavors to blend beautifully.

Finish with Greens: About 30 minutes before you're ready to serve, stir in the roughly chopped spinach or kale. This will not only add a vibrant splash of color but also boost the nutritional value. Cook until the greens are wilted and tender.

Adjust Seasoning: Before serving, give the soup a taste and adjust the Seasoning as desired. Add extra salt, pepper, or herbs to personalize the flavor profile to your liking.

Serve & Enjoy: Carefully ladle the warm soup into bowls. Revel in the comforting aromas and flavors of fall. This delightful turkey soup pairs excellently with crusty bread or a fresh garden salad for a complete meal!
