1 block (14 oz) firm tofu, pressed and drained

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 bell pepper (any color), sliced into thin strips

1 medium onion, sliced into thin rings

1 tablespoon fresh lime juice

4 large tortillas (flour or corn, your choice)

1 cup shredded lettuce

½ cup diced tomatoes

½ cup shredded cheese (optional)

Salsa and/or guacamole for serving

Prepare the Tofu: Begin by cutting the drained tofu into bite-sized cubes, about 1-inch in size. In a large mixing bowl, combine the olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper, whisking until well blended. Gently add the tofu cubes to the mixture, tossing them carefully until every piece is well-coated. Allow the tofu to marinate for about 15 minutes to absorb the flavors.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once the skillet is hot, use a slotted spoon to transfer the marinated tofu, arranging it in a single layer. Let the tofu cook for approximately 5-7 minutes, flipping the cubes occasionally to ensure they become crispy and golden brown on all sides. Once cooked, remove the tofu from the skillet and set aside on a plate.

      Sauté the Vegetables: In the same skillet (no need to clean it—you want that leftover flavor!), add the sliced bell pepper and the onion rings. Sauté the vegetables for about 5-6 minutes, or until they are tender and have a slight char. Just before finishing, drizzle in the fresh lime juice, stirring well to combine and enhance the flavor.

        Assemble the Wraps: To make the tortillas pliable, warm them in a separate pan over low heat or in the microwave for about 20 seconds. On each tortilla, generously layer crispy tofu, sautéed bell pepper, and onion mix, followed by shredded lettuce, diced tomatoes, and cheese if desired.

          Fold and Serve: To fold the wraps, tuck in the sides of each tortilla, then roll from the edge nearest to you, encasing all the delicious filling tightly. Serve the wraps immediately with salsa and guacamole on the side for dipping and added flavor.
