2 large russet potatoes, peeled and roughly chopped

1 cup Pepper Jack cheese, shredded

1/2 cup green onions, finely chopped (green parts only)

1/4 cup fresh cilantro, chopped

1 large egg

1/2 cup all-purpose flour

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup Panko breadcrumbs

Vegetable oil, for frying

Instructions
 

Cook the Potatoes: In a large pot, bring salted water to a boil. Add the chopped russet potatoes and cook until they are fork-tender, approximately 15-20 minutes. Drain the potatoes and allow them to cool for a few minutes.

    Mash the Potatoes: Transfer the drained potatoes to a large mixing bowl. Using a potato masher or fork, mash the potatoes until smooth and creamy, leaving a few lumps for added texture if desired.

      Combine Ingredients: To the mashed potatoes, add the shredded Pepper Jack cheese, finely chopped green onions, fresh cilantro, egg, all-purpose flour, garlic powder, smoked paprika, and season generously with salt and pepper. Mix the ingredients together thoroughly until well combined.

        Form the Cakes: With clean hands, scoop out portions of the potato mixture and form them into patties, approximately 3 inches in diameter and 1/2 inch thick. Place the formed patties on a parchment-lined baking sheet to keep them organized.

          Coat the Patties: In a shallow dish, pour in the Panko breadcrumbs. Take each potato cake and gently press both sides into the breadcrumbs to coat them evenly. Return the coated cakes to the parchment-lined baking sheet.

            Fry the Cakes: In a large skillet, pour in enough vegetable oil to cover the bottom by about 1/4 inch. Heat the oil over medium heat until it shimmers. Carefully add a few potato cakes into the skillet, ensuring not to overcrowd the pan. Fry each cake for about 4-5 minutes on one side, until it turns a golden brown and becomes crispy. Flip and cook for an additional 4-5 minutes on the other side.

              Drain Excess Oil: Once the potato cakes are cooked, transfer them to a plate lined with paper towels to absorb any excess oil. Repeat the frying process with the remaining patties.
