4 medium-sized russet potatoes, thoroughly washed and thinly sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup canned black beans, drained and rinsed

1 jalapeño, thinly sliced (optional for added heat)

1 ripe avocado, diced

½ cup fresh cilantro, finely chopped

½ cup sour cream or Greek yogurt

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it’s hot enough for baking the potatoes.

    Prepare the Potatoes: In a large mixing bowl, combine the thinly sliced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss well until all the potato slices are evenly coated in the seasoning mixture.

      Bake the Potatoes: Spread the seasoned potato slices in a single layer on a large baking sheet. Bake in the preheated oven for about 25-30 minutes, flipping the slices halfway through, until they are golden brown and crispy to the touch.

        Layer with Cheese: After the potatoes are crisped to perfection, remove them from the oven and reduce the temperature to 375°F (190°C). In a large, oven-safe skillet, arrange half of the baked potato slices. Top them with half of the black beans, slices of jalapeño, and a blend of cheddar, mozzarella, and Parmesan cheese.

          Repeat Layers: Next, add the remaining potato slices to the skillet, followed by the rest of the black beans and jalapeños. Finish with the remaining cheese on top.

            Bake the Skillet: Return the skillet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.
