Crispy Garlic Tofu Bowls

1 block firm tofu (14 oz), drained and pressed

2 tablespoons cornstarch

4 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon freshly grated ginger

1 tablespoon rice vinegar

2 cups cooked brown rice (or quinoa)

1 cup broccoli florets

1 cup bell peppers, sliced (any color)

1 carrot, julienned

2 green onions, chopped

Sesame seeds for garnish

Salt and pepper to taste

Prepare the Tofu: Start by cutting the pressed tofu into bite-sized cubes. In a medium mixing bowl, toss the tofu cubes with cornstarch, and season with salt and pepper until each piece is evenly coated. This will help achieve that perfect crispy texture!

    Cook the Tofu: Heat the olive oil in a non-stick skillet over medium-high heat. Once hot, carefully add the tofu cubes to the skillet. Cook for about 4-5 minutes on each side, turning gently until the tofu is golden brown and crispy all over. Once done, remove the tofu from the skillet and set it aside on a plate.

      Prepare the Sauce: In the same skillet, without cleaning it, add the minced garlic and freshly grated ginger. Sauté over medium heat for about 30 seconds, or until fragrant. Next, pour in the soy sauce, sesame oil, and rice vinegar, stirring well and cooking for another minute to allow the flavors to meld together.

        Stir-Fry the Vegetables: Add the broccoli florets, sliced bell peppers, and julienned carrot to the skillet. Stir-fry for approximately 5-7 minutes, or until the vegetables are tender yet still crisp. Season with a pinch of salt and pepper to elevate the flavors to your liking.

          Combine Everything: Gently return the crispy tofu to the skillet, using a spatula to mix it with the sautéed vegetables and sauce. Stir gently until the tofu is well-coated in the sauce and heated through. Remove the skillet from the heat.

            Assemble the Bowls: Start by dividing the cooked brown rice or quinoa evenly into 4 serving bowls. Top each bowl with the tofu and vegetable mixture, ensuring even distribution. Sprinkle the chopped green onions and sesame seeds on top for a delightful finishing touch.
