2 medium zucchinis, cut into fry shapes (approximately 1/4 inch thick)

1 cup panko breadcrumbs

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika (for a hint of heat)

1/4 teaspoon freshly ground black pepper

1/4 teaspoon sea salt

2 large eggs

Cooking spray or a light drizzle of olive oil

Fresh parsley, finely chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat to ensure easy removal of the zucchini fries after baking.

    Prepare the Zucchini: Cut the zucchinis into fries, ensuring they are of uniform size for even cooking. To reduce moisture, pat the zucchini pieces dry with a paper towel.

      Make the Coating: In a shallow mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and sea salt. Stir until all ingredients are well mixed and evenly distributed.

        Prepare the Egg Wash: In a second shallow bowl, crack the eggs and whisk them until they are frothy. This will help the breadcrumb mixture adhere to the zucchini.

          Coat the Zucchini Fries: Take each zucchini fry and dip it first into the egg wash, letting any excess egg drip off. Then, roll it in the breadcrumb mixture, pressing gently to ensure a thick coating. Arrange the coated fries on the prepared baking sheet, making sure they are well spaced apart to promote even crisping.
