Crispy Bacon & Egg Breakfast Grilled Cheese

4 slices of thick-cut sourdough bread

4 large eggs

8 slices of crispy bacon

4 slices of sharp cheddar cheese

2 tablespoons unsalted butter, softened

Salt and pepper to taste

Fresh chives, chopped (optional, for garnish)

Instructions
 

Cook the Bacon: Heat a skillet over medium heat. Add the bacon slices and cook until they are crispy and golden brown, about 5-7 minutes. Once cooked, use tongs to transfer the bacon to a plate lined with paper towels to absorb excess grease, leaving approximately one tablespoon of bacon fat in the skillet.

    Prepare the Eggs: In the same skillet with the remaining bacon fat, crack in your eggs. You can choose to keep them sunny-side up or cook them to your preferred level of doneness. Season them lightly with salt and pepper. Cook until the egg whites are set while the yolks remain runny, approximately 4-5 minutes. Once cooked, remove from the skillet and set aside.

      Assemble the Sandwiches: Preheat a griddle or a large non-stick skillet over medium heat. Generously spread butter on one side of each slice of sourdough bread. On the unbuttered side of two slices, start layering: place two slices of cheddar cheese, followed by four slices of crispy bacon, then one fried egg, and finish with the remaining two slices of cheddar cheese. Cap each sandwich with the other slices of bread, ensuring the buttered sides are facing out.

        Grill the Sandwiches: Carefully transfer the assembled sandwiches to the preheated griddle. Cook for approximately 3-4 minutes until the bottom is golden brown and crispy. Using a spatula, gently flip the sandwiches and press down slightly to ensure even grilling. Grill for an additional 3-4 minutes on the other side until it’s also golden and the cheese is melty.

          Serve: Once both sides of the sandwiches are perfectly golden and the cheese is deliciously oozy, remove them from the heat. Carefully cut each sandwich in half to reveal the gooey layers inside. If desired, sprinkle with chopped fresh chives for a pop of color and flavor.
