Ingredients

8 slices of thick-cut bacon

1 cup sharp cheddar cheese, freshly shredded

1 cup cream cheese, softened to room temperature

1/2 cup green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon freshly ground black pepper

1/2 teaspoon smoked paprika (optional for a smoky flavor)

1 cup breadcrumbs (use panko for an extra crispy texture)

Cooking spray or extra virgin olive oil for drizzling

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

Cook the Bacon: In a medium-sized skillet, cook the thick-cut bacon over medium heat until it reaches a crispy texture without crumbling excessively. Once done, transfer the bacon to a plate lined with paper towels to drain excess grease. After cooling for a few minutes, chop the bacon into small, bite-sized pieces.

Prepare the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese and the freshly shredded sharp cheddar cheese. Add in the finely chopped green onions, garlic powder, black pepper, and smoked paprika (if using). Mix everything thoroughly until well combined. Gently fold in the chopped bacon pieces for even distribution.

Form the Bites: Using your hands or a small cookie scoop, take portions of the cheese mixture and shape them into bite-sized balls, roughly 1 inch in diameter. Arrange the formed balls on the prepared baking sheet, spacing them out evenly.

Coat the Bites: To create a delectable crunch, roll each cheese ball in breadcrumbs until they are fully coated. For an extra layer of crunch, consider dipping the bites in an egg wash (beaten egg) before rolling them in breadcrumbs for double coating.

Bake: To achieve that perfect crispiness, lightly spray each coated bite with cooking spray or drizzle a small amount of olive oil over them. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the bites are golden brown and crispy on the outside.

Serve: Allow the bacon cheddar bites to cool for a few minutes on the baking sheet before serving. They are best enjoyed warm and can be paired with your favorite dipping sauce, such as ranch or barbecue sauce, to elevate the flavor.
