1 pound ground turkey

1 cup cooked rice (either white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cream cheese, softened to room temperature

1 cup shredded cheddar cheese

1 cup diced tomatoes (you can use canned or fresh)

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

¼ cup fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures it’s ready when you're finished preparing the peppers.

    Prepare the Peppers: Take the bell peppers and carefully slice off the tops. Remove all seeds and membranes to create a hollow space for the stuffing. Lightly brush the outside of each pepper with olive oil and place them upright in a baking dish to hold their shape.

      Cook the Turkey: In a large skillet, heat a splash of olive oil over medium heat. Once shimmering, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.

        Add Ground Turkey: Incorporate the ground turkey into the skillet. Use a spoon to break it up as it cooks. Stir occasionally, cooking for about 6-7 minutes, or until the turkey is browned and fully cooked through with no pink remaining.

          Mix the Filling Ingredients: Lower the heat to a gentle simmer. Gradually stir in the softened cream cheese until it’s melted and integrated with the turkey. Then, add the cooked rice, diced tomatoes, Italian seasoning, salt, and black pepper. Mix everything thoroughly until it’s well combined and heated through.
