Ingredients

8 oz (225g) pasta of your choice (penne or fettuccine are recommended)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, preferably crushed

1 cup heavy cream

2 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust based on your spice preference)

Salt and freshly ground pepper to taste

1/2 cup grated Parmesan cheese, plus extra for serving

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta in a colander and set aside, reserving about 1 cup of the pasta cooking water for later use.

Sauté the Garlic: In a large skillet over medium heat, pour in the olive oil. Once hot, add the minced garlic and sauté for approximately 30 seconds, stirring continually until fragrant. Be careful not to let it burn, as burnt garlic will impart a bitter taste.

Add the Tomatoes: Carefully pour in the crushed tomatoes along with their juices. Stir in the dried oregano and red pepper flakes. Allow the mixture to simmer gently for about 5 minutes, giving the flavors a chance to meld beautifully.

Make it Creamy: Reduce the heat to low and slowly stir in the heavy cream. Allow the sauce to simmer for an additional 3-4 minutes, stirring occasionally until it becomes well combined and slightly thickened.

Incorporate the Spinach: Add the chopped spinach to the creamy tomato sauce. Stir until the spinach wilts down into the sauce, which should take about 2-3 minutes.

Mix Pasta and Sauce: Throw the drained pasta into the skillet with the sauce. Toss everything together to ensure the pasta is evenly coated. If the sauce appears too thick, gradually incorporate some of the reserved pasta water until you achieve your desired consistency.

Add Cheese: Stir in the grated Parmesan cheese, mixing thoroughly until the cheese melts into the sauce and creates a rich, creamy texture. Adjust seasoning with salt and freshly cracked pepper to taste.

Serve: Dish out the creamy tomato spinach pasta onto plates or in a large serving bowl. Garnish with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired. Serve immediately and enjoy your meal!
