1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 can (14 oz) diced tomatoes, undrained

1 can (8 oz) tomato sauce

1 cup heavy cream (or coconut cream for a vegan option)

1 cup shredded mozzarella cheese (or dairy-free cheese)

1 cup fresh basil leaves, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan alternative)

1 tablespoon olive oil

Preheat the Oven: Set your oven to preheat at 375°F (190°C) to prepare for baking.

    Cook the Quinoa: In a medium saucepan, start by combining the rinsed quinoa with the vegetable broth. Bring this mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for approximately 15 minutes. The quinoa should be fluffy, and all the liquid should be absorbed when finished. Once done, remove from heat and set aside.

      Prepare the Tomato Mixture: In a large mixing bowl, combine the undrained diced tomatoes, tomato sauce, heavy cream, half of the shredded mozzarella cheese, chopped basil, garlic powder, onion powder, red pepper flakes (if using), and a pinch of salt and pepper. Stir everything together until completely blended.

        Combine with Quinoa: Gently fold the cooked quinoa into the tomato mixture. Make sure the quinoa is evenly coated with the creamy sauce for a consistent flavor throughout.
