2 tablespoons extra virgin olive oil

4 cloves of garlic, finely minced

1 can (14 oz) diced tomatoes, with their juices

1 cup heavy cream

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional, for a kick)

Salt and freshly ground black pepper, to taste

1 cup fresh basil leaves, roughly chopped

½ cup grated Parmesan cheese, plus more for serving

Cook the Pasta: In a large pot, bring water to a rolling boil and season generously with salt. Add the pasta and cook according to the package instructions until al dente (firm to the bite). Once cooked, drain the pasta, reserving about ½ cup of the starchy pasta water for later use.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, stirring frequently until fragrant but not browned, which can make it bitter.
