12 oz fettuccine or your favorite pasta

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach (about 2 oz)

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup cream cheese, softened

Salt to taste (about 1 teaspoon)

1/2 teaspoon freshly ground black pepper

1/4 teaspoon nutmeg (optional)

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until it is al dente. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set it aside.

    Sauté Garlic and Spinach: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 1 minute, or until fragrant, ensuring it does not burn. Next, add the fresh spinach to the skillet and sauté for about 2-3 minutes, or until the spinach is wilted and tender.

      Make the Alfredo Sauce: In the same skillet with the sautéed spinach, reduce the heat to low. Pour in the heavy cream and add the softened cream cheese. Stir continuously for a few minutes until the cream cheese melts and the mixture becomes creamy and smooth.

        Add Cheese and Seasoning: Gradually stir in the grated Parmesan cheese, mixing until it is completely melted and incorporated into the sauce. Season with salt, freshly ground black pepper, and nutmeg (if using), adjusting to taste. If the sauce seems too thick, slowly add the reserved pasta water, a little at a time, until you reach your desired consistency.
