8 oz (225 g) penne pasta

1 lb (450 g) Italian sausage (choose between mild or spicy)

1 tbsp olive oil (if needed)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, sliced thinly

1 yellow bell pepper, sliced thinly

1 medium zucchini, sliced into half-moons

1 cup (240 ml) heavy cream

1 cup (240 ml) chicken broth

1 cup (100 g) freshly grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the penne pasta and cook it according to the package instructions until it reaches al dente texture. Once cooked, drain the pasta and set it aside, reserving about ½ cup of the pasta water in case you need to adjust the sauce consistency later.

    Brown the Sausage: In a large skillet set over medium heat, add the Italian sausage. As it cooks, use a wooden spoon to break the sausage into smaller pieces. Sauté for about 5-7 minutes or until the sausage is nicely browned and cooked through. Once done, transfer the sausage to a plate, leaving the rendered fat in the skillet for added flavor.

      Sauté the Vegetables: In the same skillet, if the rendered fat is minimal, add a tablespoon of olive oil. Introduce the diced onion and sauté it for about 2-3 minutes until it becomes translucent and softened. Next, stir in the minced garlic, sliced red and yellow bell peppers, along with the zucchini. Continue cooking for an additional 5-6 minutes or until the vegetables are tender and vibrant.

        Create the Sauce: Pour in the chicken broth, bringing it to a gentle simmer. Stir in the heavy cream and Italian seasoning, followed by the cooked sausage. Allow the mixture to simmer for 2-3 minutes, letting it reduce slightly and thicken.

          Combine Pasta and Sauce: Add the drained penne pasta to the skillet and toss gently to combine, ensuring the pasta is fully coated in the luscious creamy sauce. Gradually sprinkle in the grated Parmesan cheese, stirring until it melts into the mixture, creating a rich and creamy consistency. Taste and season with salt and pepper as desired.
