Ingredients

1 head of garlic

2 tablespoons olive oil

12 ounces fettuccine pasta

2 cups heavy cream

1 cup grated Parmesan cheese

4 tablespoons unsalted butter

Salt and pepper, to taste

Fresh parsley, finely chopped (for garnish)

Optional: a pinch of nutmeg

Instructions

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice the top off the head of garlic to expose the individual cloves. Drizzle with 1 tablespoon of olive oil, ensuring it is well-coated. Wrap the garlic head in aluminum foil and place it in the oven. Roast for approximately 30-35 minutes, or until the cloves turn golden and become soft. Once roasted, allow it to cool for a few minutes. Then, squeeze the roasted garlic from the skins into a bowl and set aside.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook it according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta, but make sure to reserve about 1 cup of the pasta water for later use.

Prepare the Alfredo Sauce: In a large skillet set over medium heat, melt the unsalted butter. Once melted, pour in the heavy cream and bring it to a gentle simmer. Incorporate the roasted garlic by mashing it into the cream, creating a uniform and smooth sauce.

Incorporate the Cheese: Gradually add the grated Parmesan cheese to the skillet, whisking continuously until the cheese melts fully, resulting in a rich and creamy sauce. If the sauce becomes too thick, stir in some of the reserved pasta water, one tablespoon at a time, until the desired consistency is achieved. Season the sauce with salt, freshly ground black pepper, and a pinch of nutmeg if you choose to use it.

Combine Pasta and Sauce: Add the drained fettuccine to the skillet, using tongs to toss the pasta thoroughly in the creamy Alfredo sauce. Let the mixture cook for an additional 2-3 minutes to allow the pasta to absorb the flavors of the sauce.

Serve: Transfer the pasta to serving plates, garnishing each portion with finely chopped fresh parsley. Serve your delectable Creamy Roasted Garlic Alfredo while it's still hot, with extra grated Parmesan on the side for those who desire it!
