2 medium-sized beets, roasted and peeled

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini (sesame seed paste)

2 tablespoons extra virgin olive oil

1 garlic clove, minced

2 tablespoons fresh lemon juice (approximately from 1 lemon)

1 teaspoon ground cumin

1/2 teaspoon salt (or to taste)

2-3 tablespoons water (to adjust the consistency)

Fresh herbs (such as dill or parsley) for garnish

Extra olive oil for drizzling

Roast the Beets: Begin by preheating your oven to 400°F (200°C). Take the beets and wrap them individually in aluminum foil, then place them on a baking sheet. Roast the beets in the oven for 45 to 60 minutes, or until they are fork-tender. Once cooked, allow them to cool slightly before peeling off the skins. Chop the peeled beets into smaller pieces to make blending easier.

    Blend Ingredients: In a food processor, combine the roasted beet pieces with the drained chickpeas, tahini, olive oil, minced garlic, lemon juice, ground cumin, and salt.

      Process Until Smooth: Blend the mixture until it achieves a smooth and creamy texture. If the hummus is too thick for your liking, slowly add water, one tablespoon at a time, blending after each addition until you reach your preferred consistency.
