Creamy Lemon Wraps

4 large whole wheat tortillas

1 cup cooked chicken breast, shredded (using rotisserie chicken is a great time-saver)

1 cup cream cheese, softened to room temperature

1/4 cup plain Greek yogurt

Zest and juice of 1 medium lemon

1/2 teaspoon garlic powder

Salt and black pepper, to taste

1 cup mixed greens (choose from spinach, arugula, or romaine)

1/2 cup cucumbers, diced

1/2 cup cherry tomatoes, halved

Fresh dill or parsley, for garnish

Instructions
 

In a mixing bowl, add the softened cream cheese and Greek yogurt. Using a whisk, blend in the lemon zest and juice until the mixture is smooth and creamy. Sprinkle in the garlic powder, salt, and black pepper, continuing to mix until the seasoning is well incorporated and evenly distributed.

    Lay out a large tortilla on a clean surface. Use a spatula to spread a generous layer of the creamy lemon mixture over the entire surface of the tortilla, leaving about an inch of space around the edges to prevent overflowing.

      On top of the spread, layer a quarter of the shredded chicken evenly across the tortilla. Follow this with a handful of mixed greens, then scatter the diced cucumbers and halved cherry tomatoes over the top.

        To form the wrap, fold in the sides of the tortilla first, then roll it up tightly from the bottom to the top, ensuring that all the fillings are tucked securely inside.

          Repeat the assembly process with the remaining tortillas and filling ingredients until all wraps are prepared.

            After assembling all the wraps, use a sharp knife to cut each wrap in half diagonally. Arrange the halves on a serving platter for a visually appealing presentation. Garnish with fresh dill or parsley to add a burst of color and flavor.

              Serve the wraps immediately for the freshest taste, or if preferred, wrap them tightly in plastic wrap and refrigerate for up to 2 hours to enjoy them chilled.
