12 oz (340g) penne pasta

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup spinach (fresh or if using frozen, ensure it's thawed and well-drained)

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

1 cup Greek yogurt

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnishing)

Add the diced red bell pepper and zucchini, continuing to cook for an additional 5 minutes until the vegetables are softened.
