8 oz (approximately 225g) of your favorite pasta (penne or fusilli recommended)

1 can (15 oz) chickpeas, thoroughly drained and rinsed

1 cup heavy cream or coconut cream for a delicious dairy-free alternative

2 tablespoons extra virgin olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup fresh spinach, chopped (you can use baby spinach for extra tenderness)

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and black pepper to taste

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil or parsley, for garnishing

Red pepper flakes (optional, for those who enjoy extra heat)

Cook the Pasta: In a large pot, fill with salted water and bring it to a rolling boil. Add the pasta and cook according to package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water, as it will help adjust the sauce's consistency later. Once done, drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent and tender. Next, add the minced garlic and cook for an additional minute until it releases a wonderful fragrance.

      Incorporate Chickpeas: To the skillet, stir in the drained chickpeas, dried oregano, and smoked paprika. Cook for another 2-3 minutes, allowing the chickpeas to crisp slightly and absorb the flavors from the onions and garlic.
