4 cups vegetable broth

1 cup coconut milk (or substitute with heavy cream)

1 teaspoon ground cumin

1/2 teaspoon ground turmeric

Salt and black pepper, to taste

Fresh cilantro or parsley, chopped, for garnish

Optional: A squeeze of lime juice for added brightness

Heat the Oil: In a large pot, heat the olive oil over medium heat. Once hot, add the finely chopped onion. Sauté for about 5 minutes, stirring occasionally, until the onion becomes soft and translucent.

    Add Aromatics: Incorporate the minced garlic and freshly grated ginger into the pot. Cook for an additional minute, stirring frequently, until the mixture is fragrant and the garlic is slightly softened.

      Cook the Carrots: Add the diced carrots to the pot, tossing them with the onion mixture. Cook for roughly 5 minutes, allowing the carrots to begin softening and absorbing the flavors.

        Add Spice & Liquid: Sprinkle the ground cumin and turmeric over the mixture, stirring well to evenly coat the carrots. Pour in the vegetable broth and increase the heat to bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 20 minutes, or until the carrots are tender when pierced with a fork.

            Blend: Using an immersion blender, carefully puree the soup directly in the pot until smooth and creamy. If you prefer using a traditional blender, allow the soup to cool slightly, then blend in batches to avoid splattering.
