1 cup quinoa, thoroughly rinsed

2 cups vegetable broth

2 cups fresh broccoli florets (approximately 1 small head)

1 cup shredded sharp cheddar cheese

1 cup milk (use plant-based milk for a vegan alternative)

2 tablespoons cream cheese (or vegan cream cheese)

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

Salt and black pepper, to taste

Optional: 1/4 teaspoon red pepper flakes for added spice

Cook the Quinoa: In a medium-sized saucepan, bring the vegetable broth to a vigorous boil. Once boiling, add the rinsed quinoa, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the quinoa is fluffy and all the liquid has been absorbed. Once cooked, remove from heat and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, toss in the finely chopped onion and minced garlic. Sauté for approximately 3-4 minutes or until the onion turns translucent and the garlic becomes fragrant.

      Incorporate the Broccoli: Stir in the fresh broccoli florets and continue to sauté for an additional 5 minutes, allowing them to become slightly tender. For a vibrant green color, you can add a splash of water and cover the skillet to steam the broccoli for a couple of minutes.
