2 cups cooked brown rice or quinoa

1 can (15 oz) black beans, drained and rinsed

1 cup corn (can use frozen or canned)

1 red bell pepper, diced

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup shredded lettuce

½ cup shredded cheddar cheese (optional)

½ teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

For the Creamy Avocado Ranch Dressing:

1 ripe avocado

½ cup Greek yogurt (or sour cream)

1 packet ranch seasoning mix (or homemade ranch seasonings)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste

Water, as needed to thin the dressing
