12 oz pasta of your choice (spaghetti or penne are great options)

2 ripe avocados

1 cup fresh basil leaves, tightly packed

2 cloves garlic, minced

2 tablespoons freshly squeezed lemon juice

1/4 cup extra virgin olive oil

Salt and freshly ground black pepper, to taste

1/2 cup cherry tomatoes, halved (optional, for garnish)

Grated Parmesan cheese or a vegan alternative (optional, for serving)

Cook the Pasta: In a large pot, bring a generous amount of salt water to a rolling boil. Add in your pasta and cook according to the package directions until al dente. Before draining, reserve 1 cup of the pasta water. Once cooked, drain the pasta and return it to the pot.

    Prepare the Avocado Sauce: While the pasta cooks, prepare the creamy sauce. Cut the avocados in half and carefully remove the pits. Scoop the creamy flesh into a high-speed blender or food processor. To the avocados, add the fresh basil leaves, minced garlic, lemon juice, olive oil, and a pinch of salt and pepper.
