1 ripe avocado, pitted and peeled

1/4 cup Greek yogurt or sour cream (for a tangy twist)

2 tablespoons extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

1 teaspoon garlic powder (or 1 clove fresh garlic, minced)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced (preferably English cucumber for less seeds)

1/4 cup red onion, very thinly sliced

1/4 cup fresh parsley, roughly chopped

Optional: 1/2 cup feta cheese, crumbled (adds a delicious salty contrast)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente (typically around 8-10 minutes). Once cooked, drain the pasta in a colander and rinse it under cold water to halt the cooking process and cool the pasta. Set aside.

    Prepare the Creamy Avocado Dressing: In a medium mixing bowl, combine the ripe avocado, Greek yogurt (or sour cream), extra virgin olive oil, fresh lemon juice, garlic powder (or minced garlic), and a pinch of salt and pepper. Using a fork or whisk, mash the avocado until the mixture is smooth and creamy. Taste the dressing and adjust the seasoning as needed.
