12 oz spaghetti or your preferred pasta

2 ripe avocados, halved and pitted

2 tablespoons fresh lemon juice

2 cloves garlic, minced

¼ cup fresh basil leaves, plus extra for garnish

¼ cup grated Parmesan cheese (or nutritional yeast for a vegan alternative)

¼ teaspoon red pepper flakes (adjust according to your spice preference)

Salt and black pepper, to taste

2 tablespoons olive oil

½ cup cherry tomatoes, halved (optional for added freshness)

Freshly cracked black pepper and additional Parmesan for serving

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to the package directions until al dente, usually around 8-10 minutes. Before draining, reserve about 1 cup of the starchy pasta water. Drain the pasta and set aside.

    Prepare the Avocado Sauce: In a high-speed blender or food processor, combine the halved avocados, fresh lemon juice, minced garlic, basil leaves, grated Parmesan (or nutritional yeast for a vegan option), red pepper flakes, salt, and black pepper. Blend the mixture until it is smooth and creamy. If the sauce seems too thick, gradually add a splash of the reserved pasta water to achieve your desired creamy consistency.
