Ingredients

8 oz rotini pasta

1 can (5 oz) tuna packed in olive oil, drained

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/4 cup fresh parsley, chopped

1/4 cup freshly squeezed lemon juice

1/4 cup high-quality extra virgin olive oil

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and immediately rinse it under cold water to halt the cooking process. Set aside to cool completely.

Combine Salad Ingredients: In a spacious mixing bowl, add the cooled rotini pasta, drained tuna, halved cherry tomatoes, diced cucumbers, finely chopped red onion, sliced black olives, and chopped fresh parsley. Gently toss the ingredients together to combine, taking care not to break up the tuna too much.

Prepare the Dressing: In a small bowl, whisk together the fresh lemon juice, extra virgin olive oil, Dijon mustard, and a pinch of salt and pepper. Mix thoroughly until the dressing is well-emulsified and smooth.

Dress the Salad: Drizzle the dressing over the pasta mixture, and gently toss everything together until the pasta and vegetables are well-coated with the citrusy vinaigrette.

Chill the Salad: Cover the mixing bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 30 minutes, allowing the flavors to meld and develop.

Final Touches: Before serving, give the salad a gentle toss to redistribute the ingredients. Taste and adjust the seasoning with additional salt, pepper, or a splash more lemon juice as needed. Serve this refreshing salad chilled for maximum enjoyment.

              Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 4-6

                - Presentation Tips: Serve the salad in individual bowls or on a large platter. Garnish with additional fresh parsley and lemon wedges for an inviting presentation.
