Coconut Lime Shrimp Skewers

1 pound large shrimp, peeled and deveined

1 cup coconut milk

1 tablespoon lime zest (freshly grated)

2 tablespoons fresh lime juice

2 tablespoons brown sugar

1 teaspoon ground ginger

1 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 cup unsweetened shredded coconut

Fresh lime wedges and cilantro, for garnish

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to cooking to prevent burning)

Instructions
 

Marinate the Shrimp: In a large mixing bowl, whisk together the coconut milk, lime zest, lime juice, brown sugar, ground ginger, garlic powder, sea salt, and black pepper until fully incorporated. Add the shrimp to the marinade, ensuring they are completely submerged. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, or up to 2 hours, allowing the flavors to develop beautifully.

    Preheat the Grill: Heat your grill or grill pan to medium-high temperature. If using an outdoor grill, make sure the grates are clean, and lightly oil them to help prevent the shrimp from sticking.

      Prepare the Skewers: While the grill is warming up, remove the shrimp from the marinade, letting any excess liquid drip back into the bowl. Roll the shrimp in the shredded coconut, gently pressing down to ensure the coconut adheres well to each piece.

        Skewer the Shrimp: Carefully thread the coconut-coated shrimp onto the skewers, placing about 4-5 shrimp per skewer, depending on their size. Make sure to leave a little space between each shrimp to facilitate even cooking.

          Grill the Shrimp: Place the skewers on the preheated grill. Grill the shrimp for about 2-3 minutes on each side. They should be opaque, and the coconut should turn a lovely golden brown and become crispy. Be cautious not to overcook the shrimp, as they can turn rubbery if left too long on the heat.
