2 cups fresh or frozen corn kernels

1 cup all-purpose flour

1/2 cup cornmeal

1/2 cup fresh cilantro, finely chopped

2 green onions, finely sliced

2 large eggs

1/2 cup milk (dairy or non-dairy)

1 teaspoon baking powder

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and black pepper, to taste

Vegetable oil, for frying

Prepare the Dry Mixture: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, chili powder, cumin, salt, and black pepper. Use a whisk or spoon to mix these dry ingredients together until evenly distributed.

    Mix the Wet Ingredients: In a separate bowl, beat the eggs and then whisk in the milk until well combined. Pour this egg-milk mixture into the bowl with the dry ingredients. Stir gently using a spatula until the ingredients are just combined. It’s okay if the batter has a few lumps.

      Incorporate the Vegetables: Carefully fold in the corn kernels, finely chopped cilantro, and sliced green onions using a spatula. Mix gently to ensure the vegetables are evenly distributed throughout the batter without overmixing.

        Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom with about 1/4 inch of oil. Place the skillet over medium-high heat and allow the oil to heat until it shimmers, which indicates it’s hot enough for frying.

          Fry the Fritters: Using a tablespoon, drop about 2 tablespoons of batter into the hot oil for each fritter. Flatten them slightly with the back of a spatula to ensure even cooking.
