8 rice paper wrappers

1 cup vermicelli noodles, cooked and cooled

1 cup shredded red cabbage

1 cup mixed bell peppers (red, yellow, and green), thinly sliced

1 cup cucumber, julienned

1 cup shredded carrots

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 avocado, sliced

ΒΌ cup chopped peanuts (for garnish)

For the Dipping Sauce:

3 tablespoons hoisin sauce

1 tablespoon creamy peanut butter

1 teaspoon rice vinegar

1 teaspoon sesame oil

1 teaspoon lime juice

Red pepper flakes (to taste)

Instructions
 

Prep the Ingredients:

        Prepare the Dipping Sauce:

          - In a small mixing bowl, combine the hoisin sauce, creamy peanut butter, rice vinegar, sesame oil, lime juice, and a pinch of red pepper flakes. Whisk these ingredients together until smooth and well blended. Taste the sauce and adjust seasoning as needed. Set aside for serving.

            Soften the Rice Paper:

              - Fill a shallow dish or plate with warm water. Carefully dip one rice paper wrapper into the water for approximately 10-15 seconds, or until it becomes soft and pliable. Once softened, lay the wrapper flat on a clean, damp kitchen towel to prevent sticking.
