Ingredients

1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt (adjust to taste)

¼ teaspoon freshly ground black pepper

¼ teaspoon cayenne pepper (optional, for added heat)

Fresh cilantro or parsley, finely chopped, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot enough for roasting.

Prepare Chickpeas: Drain and rinse the chickpeas thoroughly in a colander. Spread them out on a clean kitchen towel to dry. Pat the chickpeas gently with the towel to absorb excess moisture, which will help achieve that delightful crispy texture.

Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas with olive oil, chili powder, smoked paprika, ground cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Toss the chickpeas vigorously until they are completely coated with the oil and spices. The mixture should look vibrant!

Roast Chickpeas: Transfer the seasoned chickpeas onto a baking sheet lined with parchment paper or a lightly greased baking pan. Ensure they are spread out in a single layer with space between them for optimal roasting.

Bake: Place the baking sheet in the preheated oven and roast the chickpeas for about 25-30 minutes. About halfway through, give the baking sheet a gentle shake or stir the chickpeas with a spatula to promote even cooking. They should turn golden brown and become crispy.

Cool and Serve: Once roasted, remove the baking sheet from the oven and allow the chickpeas to cool for a few minutes. They will continue to develop crispiness as they cool down. For an added touch of color and flavor, sprinkle fresh chopped cilantro or parsley over the top before serving.

Enjoy: Serve these chili roasted chickpeas as a hearty snack, or sprinkle them on top of salads or soups for that perfect crunch. If you happen to have leftovers, store them in an airtight container for up to three days—although they're best enjoyed fresh and crispy!
