Chili Cheese Egg Breakfast Wraps

4 large eggs

1 cup shredded cheddar cheese (or combination of your favorite cheeses)

1/2 cup cooked chili (either canned or homemade)

4 large flour tortillas (10-inch)

1/4 cup diced green onions

1/4 cup diced bell pepper (choose red or green for color)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and freshly cracked pepper, to taste

Cooking oil or butter, for frying

Optional toppings: Slices of avocado, dollops of sour cream, fresh cilantro sprigs

Instructions
 

Prepare the Filling: In a medium mixing bowl, crack the eggs and whisk them together with the garlic powder, onion powder, salt, and pepper until the mixture is well blended and slightly frothy. Gently fold in the cooked chili, shredded cheese, diced green onions, and diced bell pepper, ensuring everything is evenly combined.

    Cook the Eggs: Heat a non-stick skillet over medium heat and add a small amount of cooking oil or butter. Once the skillet is hot, pour the egg mixture into the pan. Allow it to cook undisturbed for about 1 minute until the edges begin to set. Use a spatula to gently stir and fold the mixture occasionally for about 3-4 minutes, or until the eggs are fully cooked but still creamy and soft. Once done, remove the skillet from the heat.

      Assemble the Wraps: Warm the tortillas slightly in another skillet or microwave for about 15 seconds to make them more pliable. Place an equal portion of the egg and chili filling onto the center of each tortilla. Fold in the sides and then roll the tortilla tightly from the bottom to the top to seal in the filling and create a wrap.

        Toast the Wraps: Return the wraps seam-side down to the skillet over medium heat. Toast each side for around 2-3 minutes, flipping carefully with a spatula, until they are golden brown and have a nice crispy texture.

          Serve: Remove the wraps from the skillet and, if desired, slice each in half diagonally for easier handling. Serve warm, topped with optional ingredients such as slices of avocado, sour cream, or sprigs of fresh cilantro for added flavor and presentation.
