Ingredients

1 lb ground turkey

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup cooked rice (choose either white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup frozen corn

1 cup diced tomatoes (canned or fresh, depending on availability)

1 packet ranch seasoning mix

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1/2 cup chopped green onions (for garnish)

Optional: sliced jalapeños for a spicy kick

Instructions

Preheat the oven: Start by setting your oven to preheat at 375°F (190°C), allowing it to get nice and hot while you prepare the casserole.

Cook ground turkey: In a large skillet, heat the pan over medium heat. Once hot, add the ground turkey. Stir and cook for about 5-7 minutes, breaking it apart with a wooden spoon or spatula, until it’s browned and no longer pink in the center.

Flavor the turkey: Lower the heat slightly and add the ranch dressing, ranch seasoning mix, garlic powder, onion powder, along with a sprinkle of salt and pepper to taste. Mix thoroughly to ensure every piece of turkey is coated with the flavorful seasoning.

Incorporate remaining ingredients: Gently fold in the cooked rice, black beans, corn, and diced tomatoes to the turkey mixture. Mix everything together until it’s well combined, ensuring an even distribution of ingredients.

Prepare the casserole dish: Lightly grease a 9x13 inch casserole dish with cooking spray or olive oil. Pour the turkey mixture into the dish, spreading it out evenly across the bottom. Top liberally with the shredded cheddar cheese, ensuring it covers the mixture completely.

Bake to perfection: Place the casserole in the preheated oven and bake for about 25-30 minutes. You’ll know it’s ready when the cheese is melted and bubbly, with the edges turning a delightful golden brown color.

Garnish and serve: Once baked, remove the casserole from the oven and allow it to cool for a few minutes. Before serving, sprinkle the top with chopped green onions for freshness and, if desired, add sliced jalapeños for an extra kick of heat. Serve warm and savor every bite!
