2 cups fresh broccoli florets

1 cup diced ham (smoked or cooked)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

6 large eggs

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup diced potatoes (frozen hash browns can be used as an alternative)

1 tablespoon olive oil

Optional: chopped fresh parsley for garnish

Instructions
 

Preheat the Oven: Set your oven to preheat at 350°F (175°C) while you prepare the other ingredients.

    Blanch the Broccoli: Bring a medium pot of water to a boil. Add the fresh broccoli florets and blanch them for 2-3 minutes until they turn a vibrant green color. Immediately drain the broccoli and set it aside to cool.

      Sauté the Potatoes: In a large skillet over medium heat, add the tablespoon of olive oil. Once hot, toss in the diced potatoes (or frozen hash browns) and cook, stirring occasionally, for 5-7 minutes, or until they are golden brown and tender.

        Mix the Egg Mixture: In a large mixing bowl, crack the 6 large eggs and pour in the 1/2 cup of milk. Add the garlic powder, onion powder, and season with salt and pepper to taste. Whisk everything together until the mixture is smooth and well combined. Then fold in the diced ham, blanched broccoli, shredded cheddar cheese, and half of the mozzarella cheese.

          Assemble the Breakfast Bake: Grease a 9x13 inch baking dish with cooking spray or oil. Spread the sautéed potatoes in an even layer at the bottom of the dish. Pour the egg and cheese mixture over the potatoes, making sure it is evenly distributed. Finally, sprinkle the remaining mozzarella cheese on top.
