1 pound ground beef

1 cup long-grain white rice

2 cups beef broth (or water)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (10 oz) diced tomatoes with green chilies, undrained

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

1 1/2 cups shredded cheddar cheese

1 teaspoon olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and diced bell pepper. Sauté for about 5 minutes or until the onion becomes translucent and the bell pepper is slightly softened. Then, stir in the minced garlic and the ground beef. Cook for approximately 7-10 minutes, breaking up the meat with a spoon, until it is browned and no longer pink. If there's excess fat, drain it off carefully.
