Ingredients

1 lb (450g) cooked chicken breast, shredded

1 bag (12 oz) tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh or canned)

1 jalapeño, thinly sliced (optional for heat)

1 cup diced tomatoes

1/2 cup sliced black olives

1/4 cup chopped fresh cilantro

1 avocado, diced

1/2 cup sour cream

1/4 cup salsa

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Instructions

Preheat the Oven: Set your oven to preheat at 375°F (190°C). This ensures your nachos cook evenly and the cheese melts beautifully.

Prepare the Chicken: In a mixing bowl, combine the shredded chicken with olive oil, garlic powder, chili powder, salt, and pepper. Stir well until the chicken is fully coated with the seasonings, enhancing its flavor.

Layer the Nachos: On a large baking sheet or an oven-safe platter, evenly spread half of your tortilla chips to form a base. Layer on half of the seasoned chicken, followed by half of the black beans, corn, diced tomatoes, and jalapeños (if using). Finally, sprinkle half of each type of cheese over the top.

Repeat the Layers: Take the remaining tortilla chips and create a second layer, then repeat the process with the remaining seasoned chicken, black beans, corn, diced tomatoes, jalapeños, and finish with the rest of the cheese, ensuring a cheesy topping.

Bake: Carefully place the assembled nachos in your preheated oven. Bake for approximately 15 minutes, or until the cheese is melted and bubbling, creating a delicious, golden crust.

Add Finishing Touches: Remove the nachos from the oven. Top them off with sliced black olives, diced avocado, and a generous sprinkle of fresh cilantro. Drizzle sour cream and salsa over the top for added creaminess and zest.

Serve: Allow the nachos to cool slightly for about a minute to prevent burns. Serve them hot, and prepare for a cheesy explosion of flavor with every bite!
