1 large zucchini, sliced into 1/4-inch rounds

1 large red bell pepper, cut into wide strips

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon smoked paprika

4 slices of sourdough bread

4 tablespoons hummus (your choice: store-bought or homemade)

Fresh arugula or spinach leaves, for topping

Balsamic glaze, for drizzling (optional)

Prepare the Veggies: In a large mixing bowl, add the sliced zucchini, red bell pepper, thick rings of red onion, and halved cherry tomatoes. Drizzle with olive oil and season with smoked paprika, salt, and pepper. Toss the vegetables gently until they are well coated with the oil and seasonings.

    Char the Veggies: Preheat your grill or grill pan over medium-high heat. Once hot, carefully arrange the seasoned vegetables in a single layer.
