1 large red bell pepper, cut into strips

1 large zucchini, sliced into thick rounds

1 cup cherry tomatoes, halved

1 medium red onion, sliced into rings

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

Salt and freshly ground black pepper to taste

4 slices of crusty whole-grain bread

4 ounces fresh mozzarella cheese, sliced

1/4 cup basil pesto

Fresh basil leaves for garnish

Balsamic glaze (optional, for drizzling)

Preheat the Grill: Heat your grill or grill pan to medium-high heat to prepare for cooking the veggies.

    Prepare the Vegetables: In a large mixing bowl, combine the sliced red bell pepper, zucchini rounds, halved cherry tomatoes, and rings of red onion. Drizzle the olive oil over the mixture and season with smoked paprika, garlic powder, salt, and pepper. Toss everything carefully until all the vegetables are evenly coated with the oil and spices.

      Grill the Vegetables: Place the seasoned vegetables directly on the grill. Cook them for about 4-5 minutes on each side, or until they develop lovely char marks and become tender. The cherry tomatoes should burst slightly, releasing their juices. Once grilled, remove the veggies from the heat and set aside to cool slightly.

        Toast the Bread: If you like, place the slices of crusty whole-grain bread onto the grill for about 1-2 minutes, letting them get lightly toasted with grill marks for added flavor and texture.

          Assemble the Sandwich: On each slice of the toasted bread, spread a generous layer of basil pesto. On two of the slices, layer the grilled veggies and top them with slices of fresh mozzarella cheese. Complete the sandwiches by placing the remaining slices of bread on top.
