4 cups chicken broth (or water for a vegetarian alternative)

1 cup shredded sharp cheddar cheese

2 tablespoons unsalted butter

Salt and pepper, to taste

For the Waffles:

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

2 tablespoons sugar

1 large egg

1 ¼ cups milk

½ cup vegetable oil

For Serving:

Sliced green onions (for garnish)

Hot sauce (optional for heat)

Maple syrup (optional for sweetness)

Instructions

Prepare the Cajun Chicken:

    - Begin by preheating your grill or a skillet over medium-high heat.

      - Coat the chicken breasts evenly with olive oil, then generously sprinkle with Cajun seasoning, adding salt and pepper to taste.

        - Cook the chicken for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F and the juices run clear. Once cooked, remove from heat and let rest for a few minutes before slicing the chicken into strips.

          Make the Grits:

            - In a medium saucepan, bring the chicken broth to a rolling boil.

              - Gradually whisk in the stone-ground grits, then reduce the heat to low. Simmer for about 20-25 minutes, stirring occasionally, until the grits have thickened to your desired consistency.

                - Once thickened, stir in the shredded cheddar cheese, unsalted butter, and season with salt and pepper to taste. Keep the grits warm while you prepare the waffles.

                  Prepare the Waffles:

                    - Preheat your waffle maker according to the manufacturer's instructions.

                      - In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar thoroughly.

                        - In a separate bowl, whisk together the egg, milk, and vegetable oil until well blended. Pour this mix into the dry ingredients and stir until just combined (do not overmix).

                          - Carefully pour the batter into the preheated waffle maker and cook until the waffles are golden brown and crispy. The cooking time may vary depending on your specific waffle maker.

                            Assemble the Waffle Stacks:

                              - Place one freshly made waffle on a plate and generously top it with a scoop of the cheesy grits.

                                - Arrange a layer of Cajun chicken strips atop the grits.

                                  - Add the second waffle on top and repeat the layering process until you achieve your desired height (2-3 layers are recommended for optimal flavor and presentation).

                                    - Finish your creation by garnishing with sliced green onions. Optionally, drizzle hot sauce for a spicy kick and maple syrup for a hint of sweetness.

                                      Serve Immediately:

                                        - Serve the waffle stacks warm, letting everyone enjoy the delightful contrast of flavors and textures. This dish is the perfect fusion of Southern comfort with a unique twist—savor every bite!
