8 cups day-old brioche or challah bread, cut into 1-inch cubes

1 cup pecans, roughly chopped

4 large eggs

2 cups whole milk

1 cup heavy cream

1 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 stick (1/2 cup) unsalted butter, melted

1 cup caramel sauce (store-bought or homemade)

Extra caramel sauce for drizzling (optional)

Whipped cream for serving (optional)

Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or a non-stick cooking spray to prevent sticking.

    Prepare the Bread: In a large mixing bowl, combine the 1-inch cubed bread and the roughly chopped pecans. Toss gently, ensuring they are evenly mixed, and set aside for now.

      Make the Custard: In a separate bowl, use a whisk to blend together the eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, ground cinnamon, and salt. Once combined, slowly pour in the melted butter, whisking until the mixture is smooth and homogeneous.

        Combine: Pour the custard mixture over the bread and pecan mixture, ensuring that every piece of bread is thoroughly soaked in the custard. Allow the mixture to sit for about 15-20 minutes so the bread can absorb the flavors.

          Bake: Transfer the soaked mixture into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 35-45 minutes. The bread pudding is ready when it feels set in the center and is golden brown on top.

            Add Caramel: Approximately 5 minutes before the baking time is completed, drizzle half of the caramel sauce over the top of the bread pudding. This will create a delightful caramel layer as it finishes baking.

              Cool: Remove the baking dish from the oven and let the bread pudding cool for 10-15 minutes. This resting period helps the pudding set further for easier serving.
