1 cup unsweetened almond milk (or your preferred milk)

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

1 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups fresh or frozen blueberries

1/4 cup chopped nuts (walnuts or pecans), optional

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper, allowing some excess to hang over the sides for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Whisk these dry ingredients together thoroughly to ensure even distribution.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, melted coconut oil, honey (or maple syrup), and vanilla extract until the mixture is smooth and well blended.

        Combine Mixtures: Gradually pour the wet ingredients into the bowl containing the dry ingredients. Stir until just combined; be careful not to overmix. Gently fold in the blueberries and chopped nuts (if using), taking care to not crush the blueberries.
