Ingredients

2 ripe bananas

1 cup fresh or frozen blueberries

1 cup Greek yogurt (or dairy-free yogurt for a vegan alternative)

2 tablespoons honey or maple syrup (adjust based on desired sweetness)

1 teaspoon vanilla extract

A pinch of salt

Optional: Chopped nuts or granola for added crunch and texture

Instructions

Prepare the Fruit: If you're using fresh blueberries, rinse them thoroughly under cold water and gently pat them dry with a clean kitchen towel. Peel the bananas, and slice them into smaller chunks to facilitate easier blending.

Blend the Ingredients: In a high-powered blender or food processor, add the sliced bananas, blueberries, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend on high until the mixture is completely smooth and creamy. Taste the blend and adjust the sweetness to your preference by adding more honey or maple syrup if needed.

Add Texture (Optional): For a delightful crunch, gently fold in chopped nuts or granola to the smooth mixture. This step is optional but adds a wonderful textural contrast to the creamy popsicles.

Fill the Molds: Carefully pour the luscious blueberry-banana mixture into popsicle molds, ensuring to leave a small gap at the top of each mold to allow for expansion as they freeze. Insert popsicle sticks into the center of each mold.

Freeze the Popsicles: Place the filled molds in the freezer. Allow the popsicles to freeze for a minimum of 4-6 hours, or until they are completely solid.

Unmold and Serve: To release the popsicles easily, run warm water over the outside of the molds for just a few seconds. Gently tug on the sticks to pull the popsicles out of the molds. Serve immediately for a refreshing treat or store them in a zip-top bag in the freezer for future enjoyment!

Prep Time, Total Time, Servings: 15 minutes | 6 hours | Makes 6 popsicles

Optional Serving Suggestions: Serve the popsicles on a colorful plate or stand them upright in a tall glass filled with ice for a vibrant display. Consider drizzling some extra honey or maple syrup on top for added sweetness!
