Ingredients

1 French baguette, sliced into 1/2-inch pieces (approximately 12 slices)

1 cup fresh strawberries, hulled and thinly sliced

1 tablespoon extra virgin olive oil

1/4 cup high-quality balsamic vinegar

2 tablespoons honey or maple syrup (optional for sweetness)

4 ounces creamy goat cheese or ricotta cheese

Fresh basil leaves, for garnish (about 8-10 leaves)

Sea salt and freshly cracked black pepper, to taste

Instructions

Prepare the Crostini: Preheat your oven to 400°F (200°C). Arrange the sliced baguette pieces in a single layer on a baking sheet. Lightly brush each slice with olive oil to enhance flavor and crispiness. Bake in the preheated oven for about 10-12 minutes, or until the slices are golden brown and crisp. Flip the slices halfway through baking to ensure they brown evenly. Once done, remove from the oven and allow to cool slightly.

Marinate the Strawberries: In a medium mixing bowl, combine the thinly sliced strawberries with balsamic vinegar. If you desire a sweeter touch, add honey or maple syrup. Gently toss the strawberries to coat them evenly in the balsamic mixture. Let them marinate for at least 15 minutes to allow the flavors to meld together.

Assemble the Crostini: Take each toasted baguette slice and spread a generous layer of goat cheese or ricotta on top. Using a slotted spoon, carefully place the marinated strawberries on each slice, ensuring some of the balsamic liquid drizzles over for added flavor.

Season and Garnish: Finish the crostini by sprinkling a pinch of sea salt and freshly cracked black pepper over the top of each. Add fresh basil leaves as a vibrant and aromatic garnish.

Serve: Arrange the finished crostini on a beautiful serving platter and serve immediately. These delightful bites make an excellent appetizer or party snack that will impress your guests.
