Ingredients

2 cups rolled oats

1 cup unsweetened applesauce

1 large Granny Smith apple, peeled, cored, and diced

2 cups almond milk (or your preferred milk type)

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/4 cup raisins or dried cranberries (optional)

Fresh apple slices and a sprinkle of cinnamon for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a standard 12-cup muffin tin by lining each cup with paper liners or by lightly greasing them with cooking spray.

Mix Wet Ingredients: In a large mixing bowl, add the unsweetened applesauce, almond milk, maple syrup (or honey), and vanilla extract. Whisk these ingredients together until you achieve a smooth and uniform mixture.

Combine Dry Ingredients: In another bowl, combine the rolled oats, ground cinnamon, ground nutmeg, baking powder, and salt. Stir these dry ingredients together thoroughly to ensure an even distribution of flavors.

Merge Wet and Dry Mixtures: Gradually transfer the dry mixture into the wet ingredients, stirring gently until just combined. Take care not to overmix. Once incorporated, fold in the diced apple, and if desired, the chopped walnuts and raisins or dried cranberries.

Fill the Muffin Tin: Using a spoon or a small ice cream scoop, evenly distribute the oatmeal mixture into each muffin cup, filling them to nearly the top. Press down gently with the back of your spoon to slightly pack the oats.

Add Toppings: For optional garnish, lay a few thin slices of fresh apple atop each oatmeal cup and lightly dust with a sprinkle of cinnamon for extra flavor.

Bake: Place the muffin tin in your preheated oven and bake for 25-30 minutes. They are ready when the tops are a lovely golden brown and a toothpick inserted into the center of one comes out clean.

Cool and Serve: Once baked, allow the oatmeal cups to cool in the tin for about 10 minutes. Carefully remove them from the tin and serve warm, or allow them to cool completely before transferring them to an airtight container for convenient breakfasts throughout the week!
