8 slices of thick-cut bacon, chopped

4 large russet potatoes, peeled and diced into small cubes

1 medium onion, finely chopped

1 bell pepper (red or green), diced

1 cup shredded sharp cheddar cheese

1 cup milk

4 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh chives or parsley, for garnish (optional)

Preheat the Oven: Begin by heating your oven to 375°F (190°C) so it’s ready when you are.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until it reaches a crispy texture, about 6-8 minutes. Once done, use a slotted spoon to transfer the bacon to a paper towel-lined plate, allowing excess grease to drain while keeping the drippings in the skillet.

      Sauté the Vegetables: In the same skillet with the bacon drippings, add the diced potatoes, chopped onion, and bell pepper. Drizzle with olive oil and season generously with salt, pepper, garlic powder, onion powder, and paprika. Cook for 10-15 minutes, stirring occasionally, until the potatoes are tender and have turned a lovely golden brown.

        Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well-combined. Add a pinch of salt and pepper to taste for added flavor.

          Combine Ingredients: Once the potatoes and vegetables are tender, remove the skillet from heat. Gently fold in the crispy bacon and half of the shredded cheddar cheese into the potato mixture. Transfer this delicious mixture into a greased 9x13 inch baking dish.

            Add the Egg Mixture: Pour the egg and milk mixture over the potato and vegetable mixture, ensuring it is evenly distributed throughout the dish. Top it off with the remaining cheddar cheese for a cheesy crust.
