Ingredients

2 cups cooked jasmine rice (preferably day-old for the best texture)

1 cup mixed vegetables (a blend of carrots, peas, and corn is ideal)

2 large eggs

1 cup cooked chicken, diced (or substitute with tofu for a vegetarian option)

3 green onions, sliced thinly

3 tablespoons soy sauce

1 tablespoon oyster sauce (or a vegetarian alternative)

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

Optional: Sesame seeds for garnish

Instructions

Prepare the Rice: If using fresh rice, cook jasmine rice according to package instructions. Once cooked, spread it out on a large baking sheet to cool completely. This step helps to dry out the rice, preventing it from becoming mushy during frying. If using day-old rice, ensure it's loosened before use.

Scramble the Eggs: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Crack the eggs directly into the pan and scramble them until fully cooked and set. Transfer the scrambled eggs to a plate and set aside.

Sauté the Aromatics: In the same skillet, pour in the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds or until the mixture becomes fragrant, taking care not to burn the garlic.

Add Vegetables and Chicken: Next, add the mixed vegetables and diced cooked chicken (or tofu) to the skillet. Stir-fry everything together for about 3-4 minutes, allowing the vegetables to become tender but still crisp.

Fry the Rice: Add the prepared jasmine rice to the skillet, breaking up any clumps with a spatula. Drizzle both the soy sauce and oyster sauce over the rice mixture, ensuring all components are well coated. Stir-fry for an additional 5-7 minutes, continuously stirring until everything is heated through and well combined.

Combine Everything: Gently fold the scrambled eggs back into the skillet along with the sliced green onions. Season the fried rice with salt and pepper to taste, stirring thoroughly until all ingredients are mixed evenly.

Serve: Remove the skillet from heat. If desired, garnish with a sprinkle of sesame seeds for added crunch and presentation. Serve the fried rice hot and enjoy this delightful Back to School meal!
