At its core, a quesadilla is a Mexican dish that typically consists of a tortilla filled with cheese and then cooked until the tortilla is crispy, and the filling is melted. The beauty of the cookie quesadilla lies in its ability to take this concept and transform it into a sweet delight. By replacing savory fillings with cookie-inspired ingredients, you create a dessert that is as fun to eat as it is to make.

Ingredients

4 flour tortillas (8-inch size)

1 cup semi-sweet or milk chocolate chips

1/2 cup creamy peanut butter (or substitute Nutella for a fun twist)

1/2 cup mini marshmallows

1/4 cup crushed graham crackers

1 ripe banana, sliced (optional)

2 tablespoons butter, for toasting

Powdered sugar, for dusting (optional)

Colorful sprinkles, for decoration (optional)

Instructions

Prepare the Ingredients: Start by gathering all your ingredients on the countertop. If you’re including a banana, slice it into thin rounds for easy layering.

Spread the Base: Take two of the flour tortillas and evenly spread a generous layer of peanut butter (or Nutella) on one side of each tortilla. Be sure to cover the surface completely so every bite is delicious.

Layer the Goodies: On top of the peanut butter side, evenly scatter the chocolate chips, mini marshmallows, and crushed graham crackers. If desired, add sliced banana rounds for a delightful flavor contrast.

Combine Tortillas: Place the second tortilla on top, ensuring that the peanut butter side is facing the filling. This creates a delicious quesadilla. Repeat this layering process for the remaining tortillas and filling ingredients until all are assembled.

Heat the Pan: In a large skillet, melt 1 tablespoon of butter over medium heat. Ensure the butter is hot but not smoking before you add the quesadilla.

Toast the Quesadilla: Carefully place one quesadilla in the skillet. Cook for about 2-3 minutes on one side until it's golden and crisp. Gently flip it using a spatula, adding the remaining tablespoon of butter to the pan. Continue cooking for another 2-3 minutes until the second side is also golden and the filling starts to melt.

Remove and Slice: Once both sides of the quesadilla are perfectly toasted, remove it from the skillet and let it cool for a minute. Then, cut the quesadilla into wedges or triangles for easy serving.

Garnish & Serve: If you like, dust the warm quesadilla with powdered sugar and sprinkle some fun sprinkles on top for added flair. Serve immediately, pairing it with a glass of cold milk or your favorite beverage.

Repeat for Remaining Quesadillas: Continue the cooking process with any leftover ingredients until all the quesadillas are perfectly cooked and ready to enjoy.
